I've been thinking about moving my genoa track, out onto the toe rail, where it can cause no harm to my core, or where the fairleads can cause harm to my toes. Is there any reason this shouldn't be done (ie extra stress on the deck/hull joint, sail geometry etc)

Geometry shouldn't be a problem (unless you are using a small jib). some folks with ariels & tritons have done it. getting a backing plate up there could be tricky.

Backing plate, I had given some thought, I was planning on using pipe, either bisected length wize or just, use 1-1/2" lengths.

Pipe sounds like a good idea.
